Chef Alfred Astl: Five-Star Compassion
As you step into Trinity Cafe, wonderful aromas embrace you… spices simmering in stock, chicken baking, vats of green beans and caramelized onions on the stove, cinnamon dusted carrot cake with raspberry sauce and a dollop of mousse prepared and ready to serve by Chef Alfred.
He is committed to those he serves – folks that have fallen on hard times; lost jobs, lost hope, closed doors, violence, illness, neglect – living without shelter in the elements. Whatever their circumstance, Alfred wants them to feel their life has worth and everyone deserves dignity, respect, a chance, and a good meal.
Alfred has prepared more than 875,030 outstanding meals in the past 11 years for this vulnerable populace. He permits no waste. Surplus food is incorporated into tomorrow’s meal. Superb planning and judicious shopping results in a thrifty meal cost. Miraculous for a hearty three-course meal likely to garner 5-stars from a restaurant critic!
Chef Alfred ensures a touch of class is served with each meal. That’s why meals are delivered in courses on china to tables set with cloths and flowers. Garnishes adorn plates. If a drop of sauce is on the rim, it is wiped off before a guest is served. It’s no different than when he managed five-star restaurants for more than 40 years in Europe and America. It must be perfect or it doesn’t leave his kitchen. Guests receive a restaurant quality meal; hot soup or chilled salad, followed by a protein-rich entrée, two tasty side dishes, dessert, fruit juice and crusty bread with butter. Guests receive a full restaurant experience only without a bill at the end of the meal.
Alfred’s heart breaks when he sees homeless children. He thinks it’s unjust that a child lives in poverty and hunger. He does what he can; no child is ever turned away from Trinity Cafe. Alfred is motivated to make a difference in the lives of those with great need.

Chef Alfred is steadfast, loyal, and dedicated. He eschews the limelight. He says, “I’ll never serve anything at the cafe that I wouldn’t serve in my own home. It would be easy to say, we’re feeding homeless people. Who cares? If I ever say that I’ll quit.” His selfless service to the homeless is inspiring. Trinity Cafe and those who won’t go to bed hungry tonight are blessed by the commitment of this amazing chef.
